We don't bake hundreds of loaves, put them on a shelf and sell them over the next few days, while being blissfully aware of the fact they won't spoil, because we have added a generous dose of calcium propionate (the most commonly used chemical preservative). No sir, we don't do that.
We bake fresh, on order, and we don't rush our baking. And because we know that our breads are not required to sit in the back of a truck for 2 days and then on the shelf of the retailer for another 2, before it is consumed, we don't need to add any nasty stuff to make them last for 10 days.

What exactly is sourdough bread?
Sourdough is bread made using a natural starter culture of wild yeast and beneficial bacteria instead of commercial yeast
How is it different from the normal bread I buy every day?
It is different in many aspects
1. Texture: Normal sandwich bread is a soft and pillowy. Sourdough has a hard crust and a chewy interior. If it is soft and pillowy, it is not a sourdough.
2. Taste: Sourdough is, well, sour! The sourness comes from the lactic and acetic acids produced by the (good) bacteria present in the dough. Normal sandwich bread has very little 'flavor'
3. Health Benefits: This is where sourdough beats normal bread hands down. The slow fermentation process gives it unique metabolic advantages over standard commercial bread.
What are the health benefits of eating sourdough bread?
Sourdough offers several key health advantages:
Easier to Digest: The long fermentation process partially breaks down gluten and complex carbohydrates, causing significantly less bloating and discomfort.
Better Nutrient Absorption: Unlike commercial bread, sourdough has lower levels of phytic acid (phytates). This reduction allows your body to more effectively absorb vital minerals like magnesium, potassium,
and iron.
Lower Glycemic Index: Sourdough has a lower glycemic index (GI), meaning it digests slower and causes a more gradual rise in blood sugar.

Everybody is selling sourdough bread these days. Are they all the same?
No. There is real sourdough and there is fake sourdough. A bread that is round or oval in shape is not necessarily a sourdough.
Check for the characteristic signs of a genuine sourdough bread:
1. Hard crust
2. Chewy crumb
3. Large, uneven holes
4. Tangy taste
If you are new to sourdough breads, it can be a little difficult to tell the genuiness. The easiest way is to see the crumb hole pattern. A normal sandwich bread will have uniform small homes throughout the slice. Sourdough will have small holes, big holes, large holes distributed unevenly throughout the slice.

Is sourdough made from maida or wholewheat?
Both. the general term for a sourdough made with maida is 'Country Sourdough'. The Wholewheat Sourdough is also available.
The difference is that wholewheat based sourdoughs are denser and heavier as compared to the country sourdough.
A country sourdough provides all the health benefits of sourdough
I tried a sourdough once, but found it too hard and chewy and sour.
Great, that means that you had a genuine sourdough bread. You can enjoy the health benefits of sourdough bread only if it is a genuine sourdough (not 'faux-dough'!). And a genuine one will have a hard crust, a chewy crumb and tangy taste.
Is sourdough gluten free?
No. Most sourdough breads contain wheat and therefore contain gluten.
Having said that, gluten partially breaks down during the sourdough fermentation process. The lactic acid bacteria and wild yeasts in the starter produce enzymes that degrade the gluten proteins into smaller fragments, which can make the bread much easier to digest
What kind of oil / fat does sourdough have?
That's another health advantage of eating sourdough - it doesn't have any oil or fat, or sugar or any other additives. A commercial bread would have all of these (and more), but a sourdough is just 4 ingredients - flour, water, salt and natural yeast
Is sourdough vegan?
Yes. Traditional sourdough is made from flour, water, salt, and natural yeast is naturally vegan.
Is sourdough suitable for diabetics?
Yes, authentic sourdough is an excellent bread option for people managing diabetes. Its unique fermentation process lowers its Glycemic Index (GI), resulting in a slower, more gradual rise in blood sugar compared to standard white or commercial yeast breads.
Can children eat sourdough?
Not 'can', children should eat sourdough. Once they taste a sourdough, they will never go back to commerical bread!
What's the best way to eat sourdough bread?
No rules here! Eat it the way you enjoy your regualr bread - toast it, grill it, have a buttered, untoasted slice, make a sandwich out of it! It is not necessary to have it only with avocado.

Sourdough is more expensive than regular bread because it is an artisanal, small-batch product that demands significantly more time, manual labor, and ingredient care.
